We craft small-batch Irish whiskeys — blended, finished and bottled by hand — for private clients and guests of the Harbourview Hotel.
Each whiskey tells a story of place and patience, inspired by Ann Murray’s quiet rebellion and Adrian and Darryl’s shared dedication to quality.
The Spirit
Led by Master Distiller Darryl McNally, we select spirit from Ireland’s finest spirit warehouses and distilleries, choosing for small-batch production and exceptional quality.
This rare access ensures Carnlough Irish Whiskey begins with the finest liquid available – a privilege few distillers can offer.
Finishing
Our finishing takes place in 64-litre quarter casks, selected for their ability to intensify flavour and accelerate maturation. We partner with Josafer Tanoaria Cooperage of Esmoriz, Portugal — specialists in Port and Sherry casks that bring rich depth and warmth to every whiskey.
The Harbour Finish
For something truly distinctive, clients can choose a Harbour Finish — where the cask is relocated to a boat in the local harbour or marina.
The gentle movement of the sea, the salt air and the maritime atmosphere create a whiskey like no other.
By Hand, Always
Every stage of our production is personal. Each bottle is filled, corked, labelled and signed by hand — a limited release, personalised with your name and story.
